Vegetarian Corn Chowder Soup Recipe

This classic American dish features not only corn, but potatoes, carrots, celery, onion, and cheese. Serve it as a stand-alone meal or as a side dish.


Vegetarian Corn Chowder Soup Recipe

  • 2 cups diced potatoes
  • ½ cup chopped carrots½ chopped celery
  • ¼ cup chopped onion
  • 2 cups boiling water
  • ¼ cup margarine
  • ½ cup all purpose flour
  • 2 cups milk
  • 10 oz. Cheddar cheese (shredded)
  • 1 (16 oz.) can creamed corn


Corn Chowder Soup Recipe Instructions

Pour the potatoes, carrots, celery, and onion into a large pot. Add the water and simmer 15 to 20 minutes, or until the vegetables are tender.

In another saucepan, melt the margarine. Whisk in the flour, then the milk. Add the cheddar cheese and stir until melted.

Add the flour mixture to the vegetables. Add the corn (including the liquid from the can). Heat without boiling.
